I have for you all another student recipe- one that gives you a healthy lunch or tea in a matter of minutes. It used up all the lovely vegetable leftovers I had hanging around in the fridge, canned produce (good old baked beans), and spices. That's right; these are baked beans, but not as you know them. Oh no! These are not the sort of beans that you throw onto two stale slices of toast! These beans form the basis of a wonderful one-pot dish that I promise you will make again, and again, and again. Until you are completely sick of baked beans. But it's okay, because then you can go back to eating them on toast.
The wonderful thing about this recipe is that any leftovers you have will work: broccoli, tomatoes- even try adding in leftover chicken, chunks of sausage, or bacon. I will definitely be playing around with this recipe to find even more combinations that I can pass on to you lot.
Ingredients:
- 1x 200g can of baked beans (I went with the reduced sugar/salt version, and they came in a multipack so I'll be eating a lot of baked beans in the foreseeable future).
- 1/2 large onion
- 1/2 large bell pepper
- 1 carrot
- 1 small eating apple (any variety, but I'm a cox's fan personally)
- 1 large handful of button mushrooms
- 1tsp madras curry powder
- 1/2tsp garum masarla
- Pinch of chilli flakes, according to taste
- 1/2-1tsp oil
Method:
- Heat the oil in a pan, chop up all the vegetables and the apple, and then add the vegetables to the pan. Cook until the onions are just beginning to soften, then add the chopped apple.
- Now, add the baked beans and all the spices.
- Simmer for 5-10 minutes, until heated through. I find that 10 minutes is the ideal time, but if you really can't wait then eating it after five won't do you any harm.
- Garnish with fresh basil for that extra flourish (and so that you can assume a smug smile in front of your flatmates), and enjoy. If your windowsill currently has no room for fresh basil, because its littered with half empty vodka bottles and odd socks, then forget I ever said anything...
