Apple & Blueberry Pie Overnight Oats


Apple pie, or apple crumble, has to be one of the best desserts there is- especially in mid autumn/winter when the weather turns cold and drizzly (if you live in the UK, as opposed to the golden leaves and auburn evenings of an American winter, or at least that's how I picture it). Its basically the ultimate comfort food. When I do decide to eat such a dessert my favourite variation has to be chunky apples with cinnamon and brambles, and thin short pastry or crumble.

However, this time of year blueberries appear to be on offer, and so what better way to use them than to create a summer version of those autumnal flavours? I think the blueberries give this breakfast a little lift and some lightness to match those summer days; the recipe would also work well with raspberries.

This recipe is very simple, very quick and can be grabbed as you leave the house. It's rich in flavour, filling, and healthy. Lets get started then...
